Avocado Pico De Gallo

 Avocado Pico De Gallo


Pico De Gallo is so refreshing for those summer days! I always make it fresh for my fajitas, tacos or any mexican dish, you can serve this with nacho chips as well for an appetizer. This is also 0 points for weight watchers if you leave out the avocado, so you don't feel as guilty eating this yummy stuff!





Ingredients:

  • 2 cups of cherry tomatoes, coarsely chopped
  • 1/2 cup of uncooked scallions, chopped, green and white parts
  • 1 small jalapeño pepper, cored, seeded and minced 
  • 2 tbsp of fresh lime juice
  • 2 avocados, coarsely chopped
  • 1/8 tsp salt
  • 1/8 black pepper

  1. In a medium bowl, combine tomatoes, scallions, jalapeño, avocados, lime juice and salt and pepper
  2. Set aside to allow flavours to blend
