Ingredients:
- 2 tsp olive oil
- 16 oz frozen broccoli heads
- 1/2 cup minced uncooked onion
- 29 oz low sodium chicken broth
- 4 oz low fat light cheddar cheese, cut into cubes
- 1/2 cup fat free skim milk
- 1/2 tsp garlic powder
- 1/2 cup water
- 1/4 cornstarch
2. Add onion and cook for 3 minutes until onion is soft
3. Add broccoli and chicken broth, bring to boil
4. Reduce heat and simmer for 3 minutes until broccoli is tender
5. Add cheese and stir until cheese is melted
6. Stir in milk and garlic powder
7.Whisk together water and cornstarch in a cup and add to soup to thicken
