Ingredients:
- 2 1/2 tbsp cornstarch, divided
- 1/4 tsp table salt
- 3/4 pounds uncooked lean trimmed sirloin beef, thinly sliced
- 2 tsp canola oil
- 1 cup reduced-sodium chicken broth, divided
- 5 cups uncooked broccoli, florets
- 1 tbsp ginger root, fresh, minced
- 2 tsp minced garlic
- 1/4 tsp red pepper flakes, or to taste
- 1/4 cup water
- 1/4 cup low sodium soy sauce
1. On a plate, combine 2 tablespoons of cornstarch and salt; add beef and toss to coat
2. Heat oil in a large skillet over medium/high heat, add beef and fry until brown and cooked through
3. Transfer beef to bowl with slotted spoon
4. Add about 1/2 cup of broth to same skillet, add broccoli; cover and cook tossing occasionally and sprinkling with a teaspoon of water as needed, until broccoli is almost crisp, for about 3 minutes
5. Add ginger, garlic and red pepper flakes; stir-fry until fragrant, about 1 minute
6. In a cup stir together water, soy sauce remaining 1/2 cup of broth and remaining 1/2 cup of cornstarch until blended; stir into pan.
7. Reduce heat to medium/low and let simmer until slightly thickened for about 1 minute
8. Return beef and accumulated juices to pan; toss to coat
9. Cover on rice or noodles or make a yummy lettuce wrap!
